Gather the necessary ingredients.

Preheat the oven to 350°.

Measure out the correct amounts of flour, baking soda, and salt. Then sift these ingredients into a large bowl.

Next, combine the lard, sugar, and anise into a mixing bowl.

Slowly start to mix the ingredients in the mixer. Then carefully add in the two eggs, and continue to mix. Make sure to scrape off the sides of the bowl to ensure that everything gets evenly mixed!!

After the lard/sugar/anise/egg mix is thoroughly combined, carefully add the flour (powder) mixture to the lard dough.

Initially use a spatula to fold the powder mix into the dough, but when this gets more difficult, roll up your sleeves and get ready for the fun part: use your hands to massage the two together.

Knead the dough together until it is soft. Then roll the entire batch of dough into one big round ball. Set this off to the side for now.

Next, prepare the sugar coating. Pour the cinnamon and sugar into a separate, shallow bowl and stir together.

Now, take a fist sized chunk of the dough ball and knead it into a circle. Put some flour on the counter so the dough doesn't stick to the surface, and begin to roll out the dough in a thin layer.

After, use the cookie cutter to cut the dough into small circles. Peel away excess dough and put the cookies in the cinnamon sugar mix. Ensure that the entire cookie is covered evenly. Place on stone.

Fill the entire tray, and then put them in the oven for 10-12 minutes. Try not to go insane as you wait for your delicious cookies to bake!

When the timer goes off and you check to make sure they are fully cooked, remove the pan from the oven and set on the counter to cool. Do not remove the cookies from the stone until they have cooled.

Repeat the rolling/cutting/baking process until all the cookies are made. Enjoy them and try not to eat them all at once!! :)
