Dice onions into small pieces
Rub seasoning into your chops, this helps with the flavour
Melt a knob of butter with some cooking oil in a large frying pan, you can use any pan I find this the easiest however
Use a semi-nice wine for cooking, there's no point buying expensive ingredients and then using a cheap wine!!
Fry the onions in the pan until golden, then sear both sides of your chops, add a little more pepper to taste. I like pepper.
Once seared, add enough wine so the level covers the onions and about 3/4 the way up the chops
Add a lid to your pan and allow the wine to simmer for approx 20mins.
Once cooked, remove the chops and wrap in foil to keep their heat, then reduce what wine is left (boil it) until it become a almost sticky sauce. It's proper yum.
Wala. Your chops are cooked and you have a lovely rich and tangy sauce bursting with flavour!! Simply add a little side salad and a jacket potato, drizzle the reduction over it and the onions on top!!
I can't find any salad.... I can find beer however.
